It’s Monday and time to step on the scale! We have been following a very healthy eating plan by the book “Eat for Life”, which encourages getting all nutrients through plant based eating (vegan) and lots of fruits and vegetables.
I started eating this way exactly 3-weeks ago, although my “diet” and workout plan began on January 9th. Since then I have been very dedicated to getting cardio and lifting weights. A few times I have even done the P90x workout, which is so hard to do!
While it has not been easy, it has been worthwhile. I feel 100% better. There is never a time I workout and say, “wow I regret doing that”. I always feel better after and it gives me lots of energy. At night, I sleep like a rock. My workouts have gotten progressively longer because they were getting too easy. I am increasing the pace and intensity gradually over the last few weeks. When I first started running (I have never been a runner) on the treadmill, I thought I was going to die the first few minutes. Now I’m able to run intervals of walk/jog for 30 minutes followed by another 30 minutes on the stationary bike at a fast pace!
Typically my calories burnt during a workout are between 500-700. My eating plan consists of eating large amounts of salad, homemade salad dressing, lots of vegetables, lots of fresh fruit and raw cashews. I also enjoy eating a variety of vegan soups made with vegetable juice. This diet plan does not allow you to eat sugar and limits the amount of sodium. Dr. Fuhrman also recommends not eating animal protein in the beginning to maximize weight loss in the gut. Eventually you can add small amounts of animal protein in if you want to follow a less aggressive plan.
So far I am pleased at my results in such a short period of time. I am on week 3 of not eating meat and I’m down 6 additional pounds and my pants are loose and baggy. I’m definitely down a size in jeans.
My goal is to get back down to a high-school weight at about 115 pounds. I am only 5-foot 2-inches, so that would be a very nice lean weight for me. My highest weight (post kids) was 154, but when I started tracking with this diet, my weight was 142. Today’s weight was 128.
